Why Ultrasonic Humidification

Just enough moisture to loosen the testa

Too little moisture and the testa won't separate cleanly; too much and kernels come out soft and prone to breaking. Ultrasonic humidification with forced air gives fine enough control to hit the same target window on every batch.
